Happy Holidays!!

I hope you're having some happy holidays. Yesterday was Christmas, and it was a busy day for me. Not for mama's camera though. It was being a bad camera, and prolly won't get presents from Santa next year.

I will be super good next year, and was good last year so I will get and did get some presents. Hooray for me!! I got some new shoes and socks, clothes, gloves, an apron and play fruit, coloring books and regular books, and blocks. Lots of blocks.

Something new... Something yummy!!

There's a saying that says that you learn something new everyday. My something new today was yummy! It happened while mama and I were baking banana muffins. Right after we got done mixing the batter. And before we scooped the batter into the muffin pan.

Gabe's Favorite Cheesy Pasta

Every week mama and I make cheesy pasta. Every week daddy and I eat it all. It is my favorite food, and the best part is that it gets better the more leftoverish it becomes. Yummy!!

{Cheesy Pasta}
4 cups cooked pasta {about 16 oz}
2 tbsp butter or margarine
1/2 tsp chopped onion
1/2 tsp garlic powder
1 tsp ground mustard
2 tbsp flour
2 cups plain yogurt {we like soy!!}
3 cups shredded cheese


{If you haven't already, prepare the pasta according to the directions.}

Melt the butter in a pan. Then add your onion, garlic powder and ground mustard. Let them simmer for about 3-5 minutes.











Add some flour. This will help thicken your sauce. Mix it all up and let it simmer for a few minutes.












Now add the yogurt and mix it all up. Let it simmer for a few minutes so it's all a consistent temperature.











Then slowly mix in your cheese. We used medium cheddar, but you can use different types/combinations. Rememberize that if you use less yellow cheeses, your sauce may not look as "cheesy".











Let your cheese sauce simmer for a few minutes to get the cheese all melted and mixed in. Then you can spoon some on your noodles. {Mmmm...}











Whatever is leftover can be stored in the fridge for about a week {it never lasts longer than that at our house!!} It gets even better when it's leftovers!!

A box of Thanksgiving

For Thanksgiving last year, my mama and daddy and I went to Texas. We had good food and played at the park. We didn't go to Texas this year, but {spoiler alert!!} we did have good food and play at the park. There were some differences though...

Our Thanksgiving food came in a box this year. Mama didn't want to cook and daddy didn't want to do dishes, so we bought a dinner from the Sunflower Market.















You'll notice that there is a half of a pumpkin pie at the top of the box. Even I, Gabe, got to have a slice of that. It was yummy!! But first we had to eat the other yummy foods {and some not so yummies: potatoes and green beans}.
















We eated and we eated and we eated. We eated until someone started a food fight. Then we were done.


And, as I spoilered earlier, we went to the park after we were done food fighting. This year in Utah was much colder than Texas last year. There was even snow on the hill!!

And what do you do when there's snow on the hill? Go sledding of course! But what do you do when you don't have a sled? You use your bum!!


What's even better than using your bum? Using daddy and his bum!!

Fun times at Del Taco

Yesterday we {mama, daddy and me} decided that we needed to do something fun since mama came home early from work. But it was cold and there was snow on the ground. And daddy still wears flip-flops. And he hasn't found his coat since we moved houses. So... we had to find some indoor fun.

We remembered a long time ago when we went and played at the Del Taco on their slide. We decided to do that again.

And we did.

















And it was fun until one of us got super grumpy because he couldn't climb up the slide. And he had a tantrum at the Del Taco. Mama and daddy decided it was time for buy-byes, so we all went to the car. Then we realized that I only had one shoe on!!











So daddy went back to find it. He climbed up the steps and through the tunnels. He slid down the slide and climbed back up again. But... NO SHOE!! Finally daddy gave up and came back to the car, and guess what he found next to it. My SHOE!!

Hooray!!

It gets even better too. After we left the Del Taco, we decided to stop at a park even though it was cold and snowy, and daddy had flip-flops but no coat. We went down slides and even found a ball to play with. PLUS there was a poo-py dog next door to look at. What more could a little boy ask for?

Well my friends and stalkers, I haven't been saying much lately. Moving houses has taken more time than any of us realized it would! We do have some fun things in store to tell you about, and some recipes that we're (mama and I) are putting the finishing touches on.

Dinner was a little fishy tonight...

So mama found a new favorite recipe blog: The Whole Life Nutrition Kitchen. And of course, I got to be a guinea piggy for a new food. Some of my favorite foods are avacado and fish, so mama found a fish salad with avacado mayonnaise recipe. Little does she know that I've decided I don't like either one anymore!! Welcome to the world of the picky eater.

She thought you might enjoy it though, and there will be pictures to come. Here is the recipe, which can also be found here.

{Avocado Mayonnaise}

I don't have an exact recipe for this because I just add ingredients until the consistency and taste are just right.

1 to 2 small avocados
1 to 3 tablespoons fresh lemon juice
1 to 3 tablespoons extra virgin olive oil
2 to 3 tablespoons water
sea salt or Herbamare, to taste

Place all ingredients into a bowl or large mug and blend with an immersion blender (hand held blender). You can also use a blender or food processor, but given the small quantity of mayo you will be making it is much easier and more efficient to use a hand blender (makes clean-up easier too).

{Salmon Salad Sandwich}

I don't have any measurements for this either. But this is the type of meal that needs no measuring, just use your intuitions and let your taste buds guide you.

leftover cooked salmon, broken into pieces (canned or smoked salmon would also work)
avocado mayonnaise
diced carrot
diced celery
chopped green or red onion
1 to 2 cloves garlic, crushed
capers
finely chopped parsley
sea salt or Herbamare, to taste

Place all ingredients into a small bowl and gently mix together with a fork. Place a few scoops onto a slice of your favorite gluten-free bread, add some lettuce and another slice of bread. That's it! Enjoy!

Here comes the snow again!

A magical thing happened this weekend... SNOW!!! When I woke up from my nap yesterday, I was in a completely different world than the one I fell asleep in. If it wasn't magic, then I don't know what it was.

However, yesterday was waaaay too cold to play outside, so I had to wait until it warmed up today. Which it did. Lucky for me, the world was still snowy and magical.

Mama and daddy and I went outside and ran around in the snow and leaves. We jumped and climbed and threw snow. So much fun!!!

All about my haircut

It's said that you can tell how good a boy's nap was by how big his hair is when he wakes up. Well, yesterday I must have had a very good nap, because this is how my hair looked:

















However, mama thought that it meant that my hair needs a trim. So the next day {today!!} we went to the kids' hair cutting place. We had to wait for a little while, but had lots of fun playing on the slide!! In 3...2...1...!!


Then it was time for business. I watched a movie while the nice lady brushed and trimmed my hair. I sat still {most of the time} like a good boy.































Since I was such a good boy, the nice lady gave me a balloon when I was all done! And when we got home, mama gave me some cheese to snack on. What more could a boy ask for?
